Happy Friday!! And for those of us living in British Columbia - HAPPY LONG WEEKEND!
Our government has decided to give us all a long weekend in February - you know, out of the kindness of their hearts - and they named this long weekend Family Day!
For some reason though, B.C likes to mix things up a little and instead of joining the rest of the country NEXT weekend - we are doing it this weekend.
So for now I will enjoy myself (until I see my friends throughout the country getting their long weekend... and then I will want a do-over!)
I booked a fancy-shmancy hotel room for D and I to celebrate Valentines day on Sunday night... I can't wait. It has a big ol' King Sized Bed and a Jacuzzi! So fun.
Last night I made THIS and I just have to share it with you.
Spicy Sausage Pasta
And while I did use it as inspiration - I did change it up a little to make it my own.
Here's the recipe and what I did to make it (in my humble opinion!) better.
1 tbsp olive oil
1 lb smoked sausage - casings off and crumbled into the pan (I used italian spicy sausage)
1 large sweet onion
2 cloves garlic, minced
2 cups chicken broth
1 (10 oz) can diced tomatoes (I used the Italian style)
1/2 cup heavy cream
4 cups (dry) egg noodles (any pasta will do!)
1/2 teaspoon pepper

1 cup grated parmesan
1 cup grated cheese of your choice (I used marble)
1/3 cup thinly sliced green onion

1. Add olive oil to an oven-safe skillet over medium high heat until
just smoking. Add sausage until lightly browned,
throw in the onion until they are clear or starting to caramelize (your preference with how you like them.) Add garlic and cook until fragrant, about 30 seconds.
2. Add broth, tomatoes, cream, pasta, and pepper and stir. Bring
to a boil, cover skillet, and reduce heat to medium-low. Simmer until
pasta is tender, about 15 minutes.
3. Remove skillet from heat and stir in 1/2 cup cheese. Top with
remaining cheese and sprinkle with scallions. Broil until cheese is
melted, spotty brown, and bubbly.
This was SO easy and SO good.
The best part is that I only had to use one cutting board and one large pan to cook it in.
The less dishes you have to do the better right?
I think you could omit the heavy cream - just to make it a little calorie friendlier!
Definitely give it a try though.
